Corned Beef Hash


This has gotto be one of our favourite versions of this recipe. Its tasty, simple and works every time.”Peel and grate 2 medium onions, dice 8oz corned beef and 8oz cooked potatoes, slice 8oz tomatoes. Melt 1/2 oz dripping into a strong frying pan. Add the onions and fry gently until soft. Add the corned beef and potatoes, cook for several minutes, then add the tomatoes and a little seasoning. Cover the pan with a plate and cook very slowly for 15 minutes.”
