This meal takes about 15 minutes to make and is designed to feed 4 people. As usual it was ample for the five of us. We ate this with a lovely salad (Im loving Aldis vine tomatoes at the moment… theyre on special as well). The kids had a bit of trouble with this recipe… but then again our 3 kiddies arent big on stronger flavours (not a curry eater among them).
2 to 4 oz corned beef
4oz soaked bread
6 mashed carrot
mock horse radish ( 4 tablespoons shredded swede, 1 1/2 teaspoons mustard, 1 1/2 tablespoons vinegar)
chopped parsleysalt and pepper
Mix all the ingredients together.
Press into basin/ mould and leave with a plate and weight on top for about 4 hours.
Turn out, cut into slices and serve with potato salad and watercress…. or in our case a hefty grean salad (with gorgeous vine tomaaatooooooes)
