Fish envelope

This recipe takes about 20 to 30 minutes to make and is designed to serve a family (4 to 5)… If youre not as many you can either halve the ingredients or store the leftovers for the next days lunch.

Ingredients for potato pastry:

8 tablespoons flour (in wartime this would have been National flour… which could be a git to work with… I dont envy housewives then)

4 tablespoons mashed potato

2 oz fat

Ingredients for filling:

12 tablespoons cooked vegetables, mashed

salt and pepper

4 oz cooked or tinned fish, well drained (we love Aldis frozen cod, defrosted of course)

1/2 teacup thick white source


Blend the flour and potatoe together, soften the fat slightly and blend in with the potato mixture.

It is rarely necessary to add any water to bind.

Roll out thinly and divide in two.

Spread one piece with the cooked vegetables mashed and seasoned

Cream the fish with the white sauce and spread on the other piece of the pastry.

Put together and bake in a hot oven (220C, 425F, Gas Mark 7) for 20 to 30 minutes. Eat hot or Cold
