Bacon and egg tartlets – Eggactly what the doctor ordered!


Was feeling a little run down today (full of cold and a wicked ear infection) so I needed something lazy easy and quick to serve the troops for dinner. As if by magic, our neighbours had received some eggs from a friend with some chickens and very kindly gave us a few…..Voila! Or should I say Eureka!

This is easy& simple … even the kids loved them… not a dirty plate left on the table.

Bacon and egg tartlets —> Bacon wrapped in eggs

We used Aldi’s cheapest bacon which actuall has very little fat and is surprisingly thick

Line a fairycake/ cupcake tin with your bacon… the bacon usually produces enough grease to not need pre-greasing (but do so if youre nervous about them sticking)

DO NOT SEASON at this point – bacon is usually salty enough!

Crack an egg into each ‘bacon cup’ and put into the oven on Gas Mark 6 (bottom of the oven) for about 25 minutes or until egg firms up.

These are great as part of a meal or as a light snack……… we enjoyed ours with gorgeous wholemeal toast. MMMMMMmmmm.

Will definately be doing these again…. when we have a surplus of eggs that is.
