Ginger and date cake

Well this cake went down so well I had to fight MrC for his piece so I could take a photo of it… mine had a BIG bite in it [grins].

As you can see [sort of] it was topped with some mock cream [click HERE for mock crem recipe]

MrC and Master N have requested I make this again SOON…. and I must admit, for someone who doesnt like the flavour of ginger all that much… that was ruddy marvelous! Naturally some WELL beaten mock cream helps… but mainly it was the awesome cake [<—totally taking the credit there]


7 0z self raising flour or plain flour with 3 tsp baking powder

1tsp bicarbonate of soda

1 tsp ground ginger

2 oz margarine

2 tbs golden syrup (just had enough… apparently someone has been making little midnight runs to the syrup tin tsk tsk… and it wasnt me for a change)

1-2oz sugar (i used 2oz)

2-3oz dates chopped (i used 2 oz)

1 egg

3 tbs milk (i used 4)


Grease a tin and set your oven to preheat at Gas Mark 3

Sift the dry ingredient togethr

Put the margarine, syrup, sugar into a pan on the stove and heat until melted

add the dates and allow to stand for a minutes then blend these ingredients and the egg with the flour mixture

Heat the milk in the pan which had the margarine in, stir well to make sure none of the ingredients goes to waste

Pour on to the rest of the cake ingredients, beat well

Spoon into the tin and bake in the centre of the oven for 50 minutes

allow to cool for 20 minutes before icing and/ or eating
