Prune Roly poly


Cooking time: 1 hour

Quantity: 4 to 6 helpings

Ingredients:

  • 8oz flour
  • 2tsp baking powder
  • pinch of salt
  • milk and water for mixing
  • 2 to 4oz prunes, cooked
  • 2oz bread crumbs
  • 1tbsp syrup
  • 2tsp sugar
  • 1/2 tsp cinnamon or spice
  • 1oz cooking fat

Method:

  1. Blend flour, baking powder, salt.
  2. Mix to a soft consistency with milk and water.
  3. Roll out, spread with prunes, breadcrumbs, syrup, sugar and cinnamon.
  4. Form into a roll.
  5. Melt the fat in a roasting tin and when hot put in the roll, turning it in the fat.
  6. Bake for 1 hour in a moderately hot oven (190 -200C, 375-400F, Gas Mark 5 to 6)
