Chocolate and almond FAIRY CAKES!

These cakes came out a little flatter than the usual sponge mix I use for my cakes…. perhaps because of the ground almond or chocolate? Not sure… but theyre yummy none the less and lovely with home made jam.


  • 2oz margarine
  • 2oz sugar
  • 3 drops almond essence
  • 1 egg
  • 1.5 oz plain chocolate
  • 2oz self-raising flour
  • 1 tbsp milk
  • 1oz gound almonds


  1. Cream margarine and sugar.
  2. Melt chocolate in milk over gentle heat, cool, then add to creamed fat &sugar
  3. bake in greased tin or paper cases on Gas Mark 5 for about 20 minutes.
  4. This mix should make 12 cakes

When cool cover in icing sugar and a dot of jam in the centre….. OR coat in chocolate icing

    have you tried the wartime oatmeal sausages?We love them I make in bulk & freeze but use half the quantity of salt given in the recipe & don’t add any meat or bacon,tasty & cheap!

    • Think MrC had a vague stab and made burger like critters instead of sausage shapes….but this was before we were given our mincer…….Yep we’ll have to definitely try those… Yes 2 teaspoons of salt sounds like a lot…especially if using bacon.
