Gypsy Creams

These are so easy and quick, and go down a storm with the kids…. they loved making them and eating them.


  • 2 Cups rolled oats
  • 1 cup plain flour
  • 1/2 cup sugar
  • 1 tsp bicarbonate of soda
  • 2oz margarine
  • 2oz butter (or lard… I’d use butter though)
  • 1 tbsp syrup
  • 1 tbsp water


  1. Mix the dry ingredients in a bowl and set aside
  2. melt the fats, syrup and water, without boiling
  3. add the syrup/ fat mix to the dry ingredients to form a stiff consistency.
  4. Make into small balls, about the size of hazelnuts.
  5. Flatten slightly and bake on Gas Mark 4 for about 10 to 15 minutes
  6. When golden brown, cool on a wire tray
  7. Sandwich together with a filling of butter icing, flavoured to taste with chocolate, orange or vanilla.
  8. A little dried milk and syrup helps to stretch this filling.

  1. mmm..they look delicious. Think my girls would love making them but I haven’t any syrup in could I use honey instead? or would that taste yucky?

    • it wont make any difference to the taste… its just something sweet to bind the mix together…. you may have to use a little less to get the stiff mixture you need though…. as honey is usually runnier than syrup
