Spotted Dick (Don’t panic, its a pudding)


IngredientsSpotted Dick Pudding

  • 12oz self-raising flour
  • 2oz sugar
  • 5-6oz chopped suet
  • A good pinch of salt
  • 4oz raisins
  • Cold water

Method

  1. Sieve the flour, salt, sugar into a bowl and stir in the suet and raisins
  2. Adding the cold water slowly mix into a soft dough
  3. Grease a pudding basin with butter and spoon the mixture into the basin. Cover with a piece of folded greaseproof paper.
  4. Tie around the edge with string to secure the paper and place a damp tea towel over the top. Tie once more with string to secure the tea towel
  5. Place the basin into a large lidded saucepan and fill the pan two-thirds of the way up with water.
  6. Cover with the lid, bring to a boil and simmer for 1.5 – 2 hours.
  7. Serve with Custard or….. some clotted cream 😀

  1. Oh wonderful glorious fattening, ribsticking, delightful pudding – I LOVE this – and it’s more gruesome version Dead Baby – when you omit the fruit, and serve with jam [tho I prefer golden syrup]

    I KNOW it is still August, but if we get thunder, lightning and rainstorms again this week I am making one of these.
