More Dark and sticky gingerbread


UPDATE: This was our latest gingerbread triumph… the recipe is soooo easy and is absolute gorgeous with a mock cream filling.

Rationing Revisited

So proud of how this turned out… and it tastes beautiful, we didnt add anything to it like cream or fruit this time… um well, it didnt really last that long. <—- managed to save half for tomorrow though… phew

Ingredients:

  • 6oz self-raising flour or plain flour with 3 tsp baking powder
  • pinch salt
  • 1 tsp bicarb
  • 1 tsp ginger
  • 1 tsp cinnamon or mixed spice
  • 1 egg
  • 2oz margarine (or for something a little different… peanut butter)
  • 2oz sugar
  • 2 good tbsp golden syrup
  • 1.5 tbsp milk
  • 6 tbsp water

Method:

  1. Preheat oven to Gas Mark 3
  2. Line/ grease a tin and sit together the dry ingredients
  3. Put the marg, sugar and syrup into a pan and cook on the stove until melted, add to dry ingredients BUT KEEP THE PAN
  4. Add the egg and milk then mix well
  5. add the water to the pan and bring to the boil……
