Apple fruit cake

  • 12 oz self raising flour or plain flour sifted with 3 teaspoons of baking powder
  • 4 oz margarine or cooking fat
  • 4 0z sugar
  • half to 1 teaspoon ground cinnamon
  • 8 oz cooking apples, peeled, cored and diced, weight when prepared
  • 3 oz sultanas or raisins
  • 1 egg
  • milk as required
  • 1 oz brown sugar for topping

Method

  1. Preheat oven to Gas Mark 4
  2. Grease and flour your cake tin (8 inch / 20 cm recommended)
  3. Sift the flour or flour and baking powder, into a mixing bowl
  4. rub in the margarine or fat and add the sugar
  5. add the cinnamon, apples, sultanas or raisins and the egg
  6. mix very thoroughly
  7. if necessary add a little milk BUT THE MIX MUST BE OF A STICKY CONSISTENCY… in other words it should stand up in peaks when handled
  8. Spoon the the mix into the cake tin, smooth flat on top and sprinkle over the brown sugar
  9. bake for 1 hour 15 minutes or until golden brown and firm
  10. reduce the heat slightly after 50 minutes, if necessary
  11. Cool for 19 minutes in the tin then turn out onto a wire cooling rack
  12. eat while freshly baked
