Energy cake bars – I fluffed them … but at least they still taste good

This is what they’re supposed to look like *sighs*

I goofed. I forgot to add the spices and the baking powder… which basically leaves me with a very flat (rather rectangular) fruit cake. Good thing the kids aren’t too discerning … if its cake… its eaten.

This is why you should pay attention to what you’re doing when you’re doing it and not googling your previous addresses online. #AsYouDo

I’ll have to try these again next week when I’ve replenished my raisin and nut stores. Was kind of hoping these would last the kids cake wise until Tuesday. ummmm yep. Look like its back to good old gypsies.


  • 4oz margarine
  • 3oz sugar
  • 1 egg
  • 2 TBSP golden syrup
  • 4oz plain flour
  • 1.5 tsp baking powder
  • 1tsp ground cinnamon
  • 1tsp mixed spice
  • up to 8oz raisins
  • up to 2oz walnuts, chopped


  1. Grease your tin with butter and preheat the oven to GM4
  2. Cream the margarine and sugar until light
  3. Beat in the egg and mix well then add then the golden syrup
  4. Add in the flour, baking powder, cinnamon and spices and mix in well
  5. Stir in the raisins and the nuts
  6. Spoon the mixture into the greased tin and smooth down with the back of the spoon
  7. Bake for 15 to 20 minutes
  8. remove from the oven and allow to cool. Once cool to the touch cut into bars and transfer them to a wire rack
  9. These are nice as is or with a little icing on top
