Welsh cakes


These were lovely, even better with jam/ syrup….more scone like than a cake…. but a lovely accompaniment to a good hot cup of tea.8774149738_4e1ca732a4_b

  • 20z dripping (lard works as well)
  • 6oz self raising flour or plain flour and 3 tsp baking powder
  • quarter of a tsp of ground nutmeg
  • 2oz sugar
  • 2oz dried fruit or grated carrot (I used chopped dates)
  • 1 fresh egg
  • 1 tbsp milk
  1. Rub the fat into the flour or flour and baking powder
  2. add the spice, sugar and dried fruit
  3. Mix into a stiff dough with the egg and milk
  4. Roll out to 1/4 inch in thickness and cut into your shapes
  5. Preheat and grease a griddle or heavy frying pan
  6. put in the welsh cakes and cook for 4 minutes or until golden brown on both sides

If your mixture is a bit sloppy …. like mine was or the frying just doesn’t seem to work……. oven bake them (on a lowish heat so that they heat through)…. I did and they worked out beautifully.
