Cheese Pancakes


WP_000157Admittedly I added a little ham to the mix as well….. just rounded off this lunch time nibble 😀 Which was delicious… and fairly filling as well. We had 4 pancakes each (16) … not including the one we ‘tested’.

  • 4oz flour
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 pint milk
  • 4oz grated cheese
  • salt to taste
  • fat for frying
  1. Blend the flour, baking powder and mixed eggs smoothly, add sufficient milk to make a thick, smooth batter.
  2. Beat for 10 minutes then add the rest of the milk, the grated cheese and salt.
  3. Heat a little fat in the frying pan till smoking hot, pour in a thin layer of batter, fry until golden brown on both sides. <<<< I’m useless at large pancakes so i drop three heaped tablespoons of the mix into the pan….. I make many small ones forthe kids as opposed to a few big ones….. its easier and less messy when toppings are added.
  4. Turn out and top with sauce, sprinkled cheese or just eat as they are… continue until all the batter is used.
